3/4lb of lean ground beef
1 can of delmonte italian stewed tomato (any type of garlic/herb/italian stewed tomato will do)
2 tbsp of tomato paste
2 tbsp of hot sauce
1 can of kidney beans
1 tbsp of cumin
1 tbsp of chili powder
1 tbsp of paprika
1 tbsp of salt
1 tbsp of italian herbs
1 medium purple onion chopped
1/2 green pepper chopped
3 large cloves of garlic chopped
1 tsp of crushed red pepper
1/2 a chicken or beef bullion cube
1 shot of jack daniel's whiskey or captain morgan's rum
cooking instructions.
sautee the ground beef in a killet with a little oil until completely brown. drain out all of the grease. (you can sub with ground turkey / chicken or tiny steak cubes) pour the meat out into a larger sauce pan.
use the same skillet with a little olive oil and toss in your chopped garlic, onion, pepper and 1/2 a bullion cube. Sautee together until soft (feel free to sub with another crunchy vegetable or add more chopped onion or red pepper).
To the softened vegetables in the skillet add the can of stewed tomatoes , 1 tbsp of cumin, 1 tbsp of chili powder, 1 tbsp of paprika, 1 tbsp of salt, 1 tsp of italian herbs, 1tsp of crushed red pepper and bring to a simmer.
Pour the skillet contents over the meat in the sauce pan and add the 2 tbsp of tomato paste. add 1.5 cup of water. Depending on the consistency of the chili you desire feel free to add more water. (some like a soupier chili you might like yours thicker). Stir it up and cover on med/high heat until it is up to a good bubbling, almost boiling.
At this time give it a little taste (blow on it so you don't burn your tongue) and feel free to dash in any extra of the condiments or garlic powder. Pour in the hot sauce and the shot of whiskey or rum. let that go uncovered for about 5 minutes so all the alcohol evaporates.
Toss in the drained can of beans (you can use kidney, black, navy etc.) another 5 minutes of cooking time and bring the whole thing down to a slow medium simmer. You may have to add a little more water if it is looking too thick. cover it for 15 minutes of simmering and enjoy. It is best to make it the night before and have it the next day.
Not sure on the specific carb/fat/cal/protein content but it is damn good. As long as you don't use any greasy tortilla chips you should be fine.
