Babyfaced Assassins crunchy lemon chicken haha!!

I made this last night whilst experimenting, tasted damn nice!

Ok so i got stripped skinless bonessless chicken breasts and marinated them in:

Lemon Juice
Fresh Chopped Coriander
1/2 Tsp Chilli Powder
1 tsp Olive Oil

For about 8 hours

then just before cooking them i got a tbsp of Oat Bran and coated the strips

I whacked them inder the grill (maybe frying them in a little fry light in a non stick pan would have made it a bit crunchier)

Anyway they tasted awesome especially when served with Nando's Hot piri piri sauce :D
 
i LOVE chicken marinated over night in lemon juice....it's soooo awesome.

thanks for the recipe....i'll have to try it some time this week!
 
Mmm sounds good man, I like the crunchy addition. Steel cut oats would probably work well eh? You could also do a quick egg wash (dip the breast in a beaten egg) which will make the crunch stick better.

Also, by coriander, you mean cilantro-- the leafy stuff, not coriander the seed, right? I love coriander but not cilantro.. could swap that with basil or thyme and would be just as tasty.

haha i see that stuff on US recipes but never knew what it was cos we call it coriander here (fresh coriander yes not the seed)

I like the idea of the egg whites, bump up the protein and taste factor!! :D

LOL yea.. makes no sense, it should all be coriander-- so I agree with the brits. It's the same seed, the same plant. Cilantro looks a lot like flat leaf italian parsley.. even had a guy ask me which is which in the supermarket last week as I was packaging up some parsley. Like just cause I'm fat, I know all about food! :p Of course, I did know... hehe

Definitely dip it in a beaten egg first.. up the protein and the coating will stick much better. If you're going the coriander route, I would switch the lemon juice for lime and add to the marinade: few cloves of smashed garlic, crushed cumin and fennel seeds.

I can post my sundried tomato & basil marinade if you want.. it's my favorite for chicken.
 
lol i am chinese and we call it chinese parsely
old world it is coriander seed and coriander leaf
in the US of A it is coriander seed and cilantro leaf

answer me this what is the glycemic index of oat bran
cannot find it any where
and can i consume it as a hot cereal onto itself while on atkins or not carb loading on ckd??
 
Guys I tried this but without the oats and I added to the recipe "White Wine" and let me tell you guys this is to die for... the only bad thing was that my wife took half of my chicken :(

I remember from the old school I used to use white wine for cooking chicken and fish instead of oils... and the food tastes like made out a 5 stars hotel.
