Any Thoughts?

Ok..
I went from 380 lbs of fat to a much leaner 262 lbs. Body fat is still in the 20's.
Ultimately I would like to stay around 250 - 260 lbs.. so think it would be best just to work on dropping body fat %.
Or go all out cutting which would drop my weight down, then start lean bulking?

Congratulations on your weight loss to date!

How tall are you btw, what's your waist circumference (assuming you don't mind saying) & how would you honestly describe your body structure? Is there a particular reason for wishing to remain at 250-260lb (strongman competitor etc)?

I'd personally continue to drop weight (fat) while you're motivated to do so, though my outlook on physical fitness is more muscular endurance / CV orientated, general well being / health etc.

Not sure exactly what my waist circumference is, I'd say it's tapering in decently though. Currently at about size 38 jeans, there looser in the waist then thighs though.
Body structure is large.

I'd like to remain at 250 - 260 mainly because I like being larger then average, haha. Also, powerlifting / strongman comps seem like something I would like to get into eventually.

My health / well being is actually feeling really good lately, BP, energy levels, CV, everything seems up to par.

What I'm thinking is because I'm prone to gaining fat (endo? ecto? I forget which is which).. that once I cut, if I need to bulk very much I'll be adding fat and be in a long cycle of bulking/cutting.
