Yum yum! My mom made this for me - food of the gods, I say!
Turn on the oven to preheat at about 350 - 400 F. Cut up a bunch of veggies - zucchini, aubergines, peppers, tomatoes, snow peas, butternut, pumpkin, onions, patty pans - whatever strikes your fancy, into large chunks or halves. I suppose you could use potatoes or whatever, but this is a fibrous carb thing for those dieting. I guess even our favourite broccoli will work, if you're not into a broccoli-free dinner.
Lay them all out nicely on a roasting pan. Spray with a bit of that olive oil spray or the butter stuff or whatever you can buy in your country. Now, the secret ingredients - go out and grab a bunch of fresh rosemary and thyme from your garden/balcony pots and sprinkle that all over your veggies.
Now sprinkle a bit of balsamic vinegar over everything, and put it in the oven. When it comes out about an hour or so later, sprinkle a tad more balsamic, but this time, use balsamic that you've reduced (i.e. simmer it for a while to make it more concentrated).
Use some lemon juice too if you like.
Eat this up with an egg white omelette or fish or whatever if you eat it, and you'll know how this is suddenly a household favourite around here
