Am i eating ok?

Im almost 38 yrs old, female, 5ft tall (or should i say short?) and currently 135lbs. I have lost about 40lbs about 2yrs ago and have been maintaining since.
I started doing some weights at home, just playing around with some free wiehgts and a home gym, riding an exercise bike and doing a bit of richard simmons videos. Basically doing about 45mins of exercise 6 days a week.
Recently i joined a gym and have been given a program to follow. It a full body workout that takes about an hour each time, and ive been told to do it four days a week, which i think is excessive as i think its better to have a two day break between sessions. On the other days i do 30mins on the reclining exercise bike or treadmill. I find the bike harder and tend to use that more as it makes me feel like ive really worked hard.

My question is about my diet. This is basically it.
i have a cup of oatmeal made with skim milk and splenda sugar replacement (no insulin spike from this stuff) for breakfast.
mid morning i have a 100% protein shake made with water .
Lunch is a cup of green beans miked with a cup of tuna and half a tablespoon or parmesan cheese (to make it taste good).
Afternoon snack is a protein shake again, mixed in water.
And dinner is usually chicken and rice, sometimes made into a hot curry, using spices and lowfat coconut milk.
I drink water and diet soda during the day and eat diet jello for a snack.

Is this ok?

When i had my assesment at the gym i was told my bodyfat was 27% which is obviously way to high. So my goal is to lower my body fat and to build some serious muscle. Im not interested in doing competiton etc but i really want to sculpt my body and hang on to my youth a little longer! Im sure you all understand this sentiment.
Ive had 6 children, and i know ive got a lot of work to do...but im really motivated.
Can you help me at all?
 
i would do a couple of things.... i would add something to the protein shakes like flax oil. If you are having the shake post workout i would add dextrose to it...

i would start by taking in your bw x 12 in clean calories...

looks good but what type of rice u eating? I'd restrict rice out of the diet if i were looking to reduce bodyfat. Tend to cut off eating carbs in the evening. Maybe have your lunch for dinner and vice versa.
