Grass fed 85-15 is good for general purpose use 90-10 is still pretty fatty because the percentages are by weight. I’d rather have the higher quality beef. If you want complete control, I’d recommend getting a meat grinder and making my own.

Can’t really do much better than avocado for a good quality source of fat that’s densely packed with nutrients. Pistachios would be a good source also.

Avocado oil and coconut oil are both healthy alternatives, and don’t have the overpowering flavor of olive oil. The key is not to overheat any oil being used in cooking.
