While I can't speak for the others who advertise on here I do know that I use every security measure possible to protect myself.
I may have advertised in the past but wouldn't do so again, simply because of the disappearance of the greek sources and eurocare etc, it's not hard to work out who'll be next.
3rd party email services can like hotmail can be very useful if you use them sensibly, eg access then using an anonymous web account, eg library computers, internet cafes etc
If you advertise the hotmail account it would be sensible to use a different one to send address info just incase the advertised one is being monitored by hotmail.
I wouldn't ask for a customers address until they actually wanted to order, a pricelist can be sent by email to the hotmail account.
If there is one surefire way to get taken out of the game it is to run a blind mailorder service eg
to advertise an address and prices and have people just mail money to you without any kind of vetting procedure for the customers.
